قدمت حضارة بلاد الرافدين للبشرية أولى عناصر التمدن الإنساني ومقومات التطور الحضاري عندما وضعت الأسس الأولى لثقافة الطعام والشراب وآداب المائدة ومراسيم الضيافة، هذه الحضارة التي ارتبط نشوئها بوجود النهرين الخالدين دجلة والفرات وروافدهما وإليهما نسب العراق في واحد من أكبر أسمائه التاريخية إلتصاقاً به وإنسجاماً معه.
اعتبرت الحياة أصل الوجود، واعتبر الماء رمزاً للحياة ومنبع الخير والبركة فخصوه بالتقديس وأصبح عنواناً للتمدن الإنساني، وقد اعتبر الخبز طعام الحياة المقدس لأنه القاعدة الأساسية للغذاء وإنجازاً حضارياً مهماً في تاريخ الجنس البشري المرتبط بروح القمح وقوته المقدسة المرتبطة بالآلهة.
وكانت المشروبات هي السمة المميزة لسكان بلاد الرافدين ومن جميع الطبقات الإجتماعية والتي خضعت إلى قوانين نظمت شربها والتعامل مع بائعيها، كما كان هناك علاقة إنسانية وروحية بين الخبز والخمر إذ اعتبرا أحد ضروريات الضيافة وعلامة من علامات المتعة والفرح والتمدن، ولقد زودتنا النصوص المسمارية والمشاهد الفنية بمعلومات وتفاصيل عن الولائم وآداب الطعام والتي تشير إلى المستوى الراقي والذوق الرفيع والسلوك المتحضر المرتبط بالكرم والضيافة.
