إلى ذلك تتطرق فصول الكتاب إلى صفات المواد الغذائية ومكوناتها، وصلاحية المواد الأولية المستعملة في التصنيع وأثرها على نوعية ومواصفات المواد المصنعة، مروراً بأثر المكننة في الإنتاج الزراعي والجني والتصنيع، وطرق حفظ وتصنيع الأغذية (الحفظ بالتبريد – الحفظ بالبسترة – الحفظ بالتعليب – الحفظ بالمركبات الحافظة) وغيرها. كذلك يبحث الكتاب في أسباب تلف المواد الغذائية والسلامة الصحية في طرق الإنتاج وعوامل التلف، ومصادر الغذاء التقليدية، والأغذية الجاهزة، ومواد التعبئة والتغليف وأهميتها في التصنيع الغذائي، وأنواع العبوات الأولية الشائعة. وأخيراً الأغلفة المتعددة الطبقات المرنة.
