ويتعرض هذا الكتاب- في البداية- إلى طرق قياس تركيز المحاليل الملحية والسكرية والكحولية وكيفية تحضير هذه المحاليل. كما يتعرض الكتاب للخطوات العامة لإعداد الخامات الغذائية لعمليات التصنيع والحفاظ، ثم الطرق المختلفة المستخدمة في حفظ الأغذية مثل التجفيف والتبريد والتجميد والتعليب وكذلك الحفظ باستخدام المواد الكيميائية والإشعاع. كما يتناول الكتاب بعض المنتجات الغذائية المصنعة مثل العصائر والجيلي والمربى والمرملاد والمخللات.
كما يتناول الكتاب كيفية تصنيع المياه والروائح العطرية والشامبو ومنتجات الطماطم والمياه الغازية كما يتناول إنتاج عيش الغراب. وأخيرًا.. نأمل أن تستطيع عزيزي القارئ الاستفادة من هذه التطبيقات في تصنيع أغذيتك بنفسك مما يضمن لك الجودة والسلامة.
