Book Description
المخللات هي أنواع الاطعمة التي يتطلب تصنيعها المرور بمرحلة التخمير، وتتم هذه المرحلة بنجاح عن طريق ضبط الظروف المحيطة بهذه الأطعمة، وإضافة بعض المكونات إليها بمقدار محددة لضمان عدم فسادها، ويمكن عمل المخلل مِن أصناف الخضراوات العديدة مثل، الزهرة، والبِاذنجان، والفاصولياء، والخيار، واللفت وغيرها، ويعدّ التخمير مِن أقدم الطرق التي كانت تستعمل في حفظ الأطعمة قبل إختراع التبريد.
تؤخذ كلمة المخلل من التخليل، وهي تعني وضع الخضار في مادة تخلله، فمثلاً ينقع الخيار في الماء والملح، ويوضع في وعاء مضغوط بعد سحب الأكسجين منه، ويبقى لفترة أسبوع، ويتحوّل الماء إلى سائل بنكهة الخل، ويصبح الخيار طرياً ولذيذاً، ويمكن عمل العديد من أنواع المخللات الأخرى.
تُعد المخلّلات من أنواع المقبّلات التي تُقدّم كأطباق ثانويّة بجانب الطبق الرئيسي، تتعدّدَ أنواعها وطرق تخليلها، وهنا خلال هذا الكتاب سوف تتطرّق إلى طريقة تحضير أنواع معيّنة مِن المخلّلات.
