وجرى تقسيم الكتاب إلى ستة فصول: الأول في موقع وتجهيزات التصنيع للأغذية، والثاني في اختبارات الحبوب والخبز، والثالث في إعداد المحاليل وأسس حفظ الخضر والفاكهة، أما الرابع ففي تكنولوجيا اللحوم والأسماك، والخامس كان في الحلوى، وأخيرًا الفصل السادس التخمرات الغذائية.
