وقد ارتأت دار الفكر العربي تكليفني بوضع هذا الكتاب عن السلطات فقط، دون غيرها، من الأطباق، تشجيعاً لك سيدتي، بإغناء مائدتك بها، وتنويعاً لما تعرفينه من أصنافها، على أن أبدأ بوصف الصلصات الضرورية، وأذكر فوائد عناصرها.
ولما تصفحت كتب السلطات، أو ما تتضمنه كتب الطبخ الشاملة، وجدتها تفتقر إلى معلومات أخرى، فإن إطلالة بسيطة على فائدة كل نوه من أنواع الخضار مهم لربة البيت، لأن رغبتها بما يناله أفراد عائلته من الغذاء يلفت نظرها، إن لك يكن طبعاً، من وظيفتها، وهكذا زدت أسطراً قليلة على كل سلطة فصلت فيها فوائد نوع واحد من الخضار التي تضمها حتى استوفت كل أنواع الخضار في الكتاب.
ثم أضفت أيضاً بعض الإرشادات الضرورية، مما كانت تتجنبه الكتب الأخرى، زيادة في الفائدة فبيننا، نحن السيدات، الخبيرة بالمطبخ، وتلك التي لم تتوفر لها فرصة اختباره كونها ربة بيت جديدة، أو لأسباب أخرى.
