يقدم بعض الطرق العلمية لتحليل وتقدير المكونات الكيميائية العضوية (غير المعدنية) بالأنسجة المختلفة للنبات سواء كان شجرة أو شجيرة أو نبتة صغيرة لمحاصيل الفاكهة والخضر ونباتات الزينة والمحاصيل الحقلية وغيرها.
ويشتمل هذا الكتاب على عدة أبواب تشرح بالتفصيل الطرق العملية والأساليب العلمية لتقدير هذه المكونات. ويختص الباب الأول بطرق تقدير المركبات الكربوهيدراتية وبصفة خاصة السكريات. أما الباب الثاني فيقدم بشرح مبسط عن كيفية تقدير النشا، السليلوز، اللجنين، البكتين، الرماد والألياف. في حين يتناول الباب الثالث الطرق المعملية لتقدير البروتينات المختلفة وكذلك البرولين. أما الباب الرابع فقد خصص لشرح الطرق العملية لتقدير الزيوت والدهون وكذلك الصفات العامة الخاصة بهذه المكونات. وينفرد الباب الخامس بطرق تقدير الصبغات النباتة والتي تشمل على الكاروتينات، الليكوبينات، الأنثوسيانينات، الكلوروفيلات...الخ. ويختص الباب السادس بتقديم فكرة مبسطة عن كيفية تقدير التانينات والفينولات. كما أن الباب السابع يختص بتقدير الحموضة، الخل، حمض الإسكوربيك، حمض البنزويك، حمض السوربيك المتواجدة بالمركبات العضوية بالأنسجة النباتية المختلفة سواء كانت أوراق، جذور.....الخ.
ويقدم الباب الثامن كذلك طرق متباينة في تقدير الرماد، الملح (كلوريد الصوديوم) المواد الصلبة والمواد غير الصلبة، كما يشرح بالتفصيل كيفية تقدير التلون البني الأنزيمي وكذلك تقدير الفيورفيورال. كما يلقى الباب التاسع الضوء على طرق تقدير بعض الأنزيمات مثل البيروكسيديز والكتاليز وأنزيمات نزع ذرة الهيدروجين وغيرها. ويشمل الباب العاشر على كيفية إعداد تقرير عام عن التجربة قيد التقدير، وكيفية تحضير العينات وحفظها وأيضاً كيفية تحضير بعض الأدلة والمحاصيل الشائعة الإستخدام، وتقدير مستويات المكونات الغذائية لبعض المحاصيل المختلفة.
ويضم هذا الكتاب بين دفتيه العديد من المراجع العربية والأجنبية والتي يمكن الرجوع إليها عند الحاجة للعمل في هذا المجال.
