يتناول هذا الكتاب موضوع الطعام والطهي في منطقة الشرق الأوسط في ثلاثة فصول موسعة ومقسمة إلى عدة أبحاث، قدّمها عدد عدد من الاختصاصيين في مجالات التاريخ وعلم الاجتماع والأنثروبولوجيا والجغرافيا والسياسة وكذلك الأدب، بأسلوب حديث ومشوّق يتيح للقارئ التجوّل في منطقة الشرق الأوسط تاريخياً وجغرافياً وثقافياً من خلال الأطعمة والأطباق وطرق الطهي المتبعة والمتوارثة بين سكان هذه المنطقة.
يأتي كل ذلك في وقت تطغى فيه العولمة والتجارة العالمية على أمور عديدة ومنها الطعام، مما أدى إلى ظهور المطابخ الحديثة التي تشجّع على الابتكار والإبداع، وبدأت الأطباق تفقد خصوصيتها وارتباطها بثقافتها التي انبثقت منها، فأصبح شائعاً خلط وصفات مختلفة لابتكار أطباق جديدة، ولكن في المقابل ظلت هناك دائماً الرغبة في التمسك بالأصالة والبحث في التراث عن جذور الأطباق المعروفة، لتبديد بعض الغموض حول الهوية الثقافية المرتبطة بهذه الأطباق.
