يتناول هذا المقرر أهداف الإعداد السليم والصفات الحسية للأطعمة، من خلال عرض لأدوات المطبخ المختلفة وتوضيح أشكالها واستخداماتها، كما يتناول العوامل التي تؤثر في جودة الغذاء، وطرق تجهيز المواد الغذائية الأولية، وأسس اختيارها وحفظها في المنزل،، وتوضيح حساب كمية الفقد الناتج من تنظيف بعض المواد الغذائية الأولية. واشتمل المقرر على طرق طهو الأطعمة، وكيفية انتقال الحرارة للطعام، وتأثير بعض العوامل في القيمة الغذائية.
ومناقشة فساد الأغذية وتلفها، وتصنيفها حسب قابليتها للفساد، وعوامل الفساد والتلف وأنواعها، والأمراض التي تنتقل بوساطة الأغذية، والممارسات الصحيحة والسليمة في حفظ الأطعمة وتخزينها وإعدادها، وطرق تنظيف أماكن وأدوات إعداد الطعام وتقديمه. وضرورة الفحص الدوري للمتعاملين مع الغذاء وتثقيفهم الصحي. وتناول المقرر أيضاً مفاهيم عن إدارة الوجبات والاحتياجات الغذائية للأفراد، ودليل الهرم الغذائي، وبدائل الأطعمة، والآداب المتعلقة بتقديم الطعام وتناوله عند بعض الحضارات، وتطرق المقرر إلى أساسيات تصميم المطبخ، ومراكز العمل فيه ومواصفات المواد المستخدمة في أواني المطبخ وأدواته. وقد غطى المقرر أيضاً مجالات مهمة مثل: أسس تخطيط الوجبات لبعض الحالات المرضية، وحالات البدانة (السمنة)، وأطعمة النباتيين، وتقديم وتخطيط الوجبات في الحفلات والرحلات وبعض المناسبات الدينية. لقد اشتمل هذا المقرر على تطبيقات عملية وأسئلة تقويم ذاتي وأنشطة.
