كثير من الناس لا يدركون جودة الطعام المغربي. فهناك قليل من المطاعم المغربية خارج المغرب، وحتى داخل البلاد المطاعم نادرة الوجود، خصوصاً الجيدة منها. لكن أولئك الذين تسنّى لهم تناول الطعام في المنازل المغربية أو حضروا إحدى الولائم الكبيرة أدركوا غنى ولذة ذلك الطعام. وقد يكون المطبخ المغربي واحداً من آخر الطابخ غير المكتشفة في العالم، لكن من حيث الرّهافة الترف والطعم والنكهة الشهية يمكن مقارنته بأكثر المطابخ شهرة في فرنسا والهند أو الصين. لقد اكتسبت كل المطابخ شهرتها بفضل مؤثرات خارجية، وبلاد المغرب التي يحتضنها البحر المتوسط من جهة والقارة الإفريقية من جهة أخرى تعرضت للعديد من المؤثرات التي أضفت على أطباقها نكهات جديدة وتنوعاً في المكونات الدسمة والفنية. وفي هذا الكتاب الموسوعي يجمع المؤلف أكثر من 70 وصفة متبلة من شمالي إفريقيا غنية بالنكهات والمكونات الغذائية المفيدة. ومعه ستتعلم سيدة المنزل كيفية تحضير أشهر الأطباق التي تنفرد بها المغرب كالمشوي، الكُسكُس والطاجن والخبز والبسطيلة بالدجاج واللوز وغيرها من الأطباق اللذيذة. هذا ولم يغفل المؤلف أن زين كتابه بعدد هائل من الصور الفوتوغرافية التي تهدف إلى توضيح طريقة تحضير الطبق والمراحل التي يمر بها ليصبح صالحاً للتقديم. كما ودوّن فيه المقادير والكميات وبعض النصائح الهامة لربة المنزل والتي بالتأكيد ستساعدها على تحضير أطباق لذيذة الطعم وغنية المكونات ومتنوعة النكهات فالسلطة مكانتها في هذا الكتاب وللدجاج أطباقه أما السمك فله في هذا الكتاب أهمية خاصة وقد تجلى ذلك في تنوع الأطباق المحضرة فيه. وبالتأكيد لا بد أن يختم الكتاب بوجبات من الحلى المغربية التي لا يستغني المغربيون عنها على موائدهم المستديرة المنخفضة.
