للمعادن شأن كبير في دوام حياة الإنسان علماً بأن جسم الإنسان يتركب من عناصر مختلفة من معادن وأشباه المعادن، لذلك فهو بحاجة مستمرة إلى تلك العناصر الضرورية ولا سبيل إلى تدارك إحتياجاته إلا من الهواء والماء والغذاء وما يمكن أن يصنعه نفسه.
كما أن العضلات والأعضاء المختلفة لا تؤدي وظائفها على الوجه الأكمل، إلا في حال وجود مقادير معينة من هذه العناصر، وقد تبيّن من البحوث الفيزيولوجيّة بأن حرمان الجسم منها حرماناً تاماً لمدة شهر كامل، يجعل الوفاة حتمية حتى لو كان الجسم يحصل على غذائه من جميع العناصر الأخرى.
أما إذا حرم الجسم من تناول أحد الأملاح كلياً أو جزئياً فإن الجسم قد يتداركه ذاتياً إن أمكنه ذلك كحرمانه من مادة الكالسيوم العضوية، مثلاً تعمل على إنتزاع هذا العنصر من العظام والأسنان أو تصاب الإنسان ببعض الأعراض الدالة على هذا النقص.
