لفت انتباهنا في الآونة الأخيرة الاهتمام الكبير بموضوع "سلامة الغذاء" ونظم تحقيق السلامة مثل نظام الهاسب أو ما يعرف بنظام تحليل مصادر الخطر ونقاط التحكم الحرجة. كما أدت زيادة حركة التجارة الدولية وعولمة تجارة الغذاء إلى الخوف من انتقال مصادر الخطر من الأغذية إلى الإنسان مسببة الكثير من المخاطر وحالات التسمم وخاصة بعد الضجة الإعلامية الكبيرة التي أثيرت حول الأمراض المنقولة عن طريق الغذاء والملوثات الكيميائية المسببة للسرطان مما جعل الناس في جميع انحاء العالم وعلى كافة المستويات يهتمون بموضوع سلامة الغذاء. وكثرت التساؤلات عن الجهة المسئولة عن سلامة الغذاء. كما اهتمت الأوساط العلمية والرقابية والانتاجية بإدارة سلامة الغذاء ووضعتها في بؤرة اهتمامها. ووضعت الاستراتيجيات والإجراءات المانعة مثل ممارسة التصنيع الجيد، وممارسة الشئون الصحية الجيدة واتباع نظام الهاسب وتحليل وتقييم وإدارة المخاطر.
وقد تسابقت شركات صناعة الأغذية إلى تطبيق نظام الهاسب وأصبحت كلمة "هاسب" هى كلمة السر التي يتباهى بها رؤساء الشركات والمسئولين التنفيذين بها، ونظراً لندرة الكتب العربية حول جوانب هذه الموضوعات كان هذا الكتاب الذى نرجو أن يكون اضافة للمكتبة العربية كمرجع متخصص في سلامة الغذاء. ونأمل أن يكون مفيداً للطلاب والمتخصصين في علوم الأغذية وكذلك العاملين في صناعة الغذاء والخدمات الغذائية إضافة إلى المهتمين بسلامة الغذاء وصحة مستهلكيه كالعاملين في التفتيش على الأغذية وصحة البيئة وحماية المستهلك والمواصفات والمقاييس الغذائية وكذا الهيئات والمنظمات الرقابية والوقائية.
