لا شك أن معاني المصطلحات الخاصة بالصناعات الغذائية والتغذية لايمكن أن تسعها المعاجم العادية ولما كان من الضروري لكل من يعمل في هذه المجالات أن يجد في متناول يده معجماً يحوي هذه المعاني لذا كان من الأهمية بمكان أن تعمل على إعداد هذا المعجم والذي تنقصه المكتبة العربية. ونظراً للغرتباط الوثيق بين علوم الصناعات الغذائية والتغذية فقد أثرنا أن يضم المعجم المصطلحات الخاصة بهذه العلوم حتى يجد كل من الأخوة الدارسين الباحثين وكل طالب علم أو معرفة في مجال الصناعات الغذائية والتغذية تفسيراً وافياً ودقيقاً للمصطلحات التي قد تصادفه، ويضم هذا المعجم أيضاً عدة ملاحق، أحدها عن العناصر المعدنية في جسم الإنسان وآخر عن التركيب الكيميائي للبن الأمهات والبقار وهذا قد يفيد كثيراً في وضع واقتراح تركيبات غذائية تفيد في تغذية الأطفال في سن مرحلة العظام أو ما قبلها. هناك ملحق للقيم الغذائية لمعظم الأغذية المتاحة للإستهلاك وهذا بالطبع ضروري في عملية تخطيط الوجبات وفي التغذية العلاجية. أما الملحق الخاص بالحدود الدولية المسموح بها من العناصر الضارة في الأغذية المختلفة فلا شك أنه يفيد كثيراً في عمليات الرقابة على سلامة الغذاء.
