الكافيار: هو بيض سمكة الحفش وهي السمكة الوحيدة في العالم التي يستخرج منها الكافيار وتعيش في بحر قزوين حيث يعتبر المصدر الوحيد للكافيار الطبيعي، كما أن سمكة الحفش تعتبر من الكائنات المعمرة وقد صنفها البعض من فئة الديناصورات، حيث يصل عمرها إلى 100 سنة ووزنها يتراوح بين 200 إلى 1500 كيلوغرام.
و"عرش الكافيار" هو كتاب يستعرض فيه المؤلف "عبد العزيز محمد الجويعي" خلاصة تجربته العميقة في أخطر تجارة نظامية على مر التاريخ. إنها تجارة الكافيار.
كيف بدأت القصة الغريبة في تكوين أكبر منظومة تسويق وبيع للكافيار الطبيعي في العالم، وما هو السر في هذه الحبيبات السوداء اللامعة، التي كانت حكراً على الأسرة الحاكمة في روسيا وبريطانيا وغيرهم من النخبة والأثرياء على مر التاريخ، أمن أجل لذتها أو فائدتها أو ندرتها.

(...) نحن حالياً لا نبيع الكافيار فقط!! بل نحاول تثقيف المجتمع وتعليمه ما هو الكافيار؟ وليس المجتمع مجبراً على أكله أو شرائه، ولكن هذا عملنا، وهذه واجباتنا تجاه منتجنا وللناس حرية الاختيار".
وفي الكتاب أيضاً، لا يكتفي المؤلف بعرض تجربته بل يتخطى ذلك إلى التعريف بالكافيار، وكيفية استخراجه وأنواعه وفوائده وقيمته الغذائية والفرق بين الكافيار الطبيعي والصناعي ويختتم عرضه بمجموعة من الوصفات الشهية (السلطات) التي يستخدم فيها الكافيار.
