يعتبر الغذاء من العناصر الأساسية اللازمة لحياة الإنسان بعد أكسجين الهواء والماء وبدون لا يمكن البقاء على وجه الأرض؛ ولكي نضمن السلامة الصحية للغذاء يجب التعرُّف على ما قد يُصيبه من مواد ضارة بالصحة سواء كانت كيميائية أو من الأحياء الدقيقة الممرضة كالميكروبات المختلفة والسموم التي تفرزها بالغذاء والتي قد تؤدي إلى حدوث التسمم الغذائي... والتسمم الغذائي عبارة عن مجموعة الأعراض المرضية التي تصيب الإنسان (أو الحيوان) من تناول أغذية أو مشروبات مُلوثة بمسببات المرض سواء كان هذا التلوث من مصدر بكتيري أو سموم فطرية أو سموم طبيعية أو سموم كيميائية أو نتيجة للتلوث البيئي أو الإشعاعي.
من الأهمية عند دراسة التسمم الغذائي وأسبابه أن نفرق بين نوعين من التسمم: (النوع الأول): "التسمم الغذائي الحاد أو المفاجئ"، أما (النوع الثاني): فهو "التسمم الغذائي طويل المدى".
