يتناول هذا الكتاب سلوكيات الإنسان الغذائية اليومية التي تؤمن له الصحة، ولكنها وراء جل أمراضه أيضاً.\r\nيبين الكتاب احتواء الغذاء الصحي الآمن على أغلب العناصر الضرورية للجسم بقدر الحاجة، ويجب أن ترافقه بالنشاط ليبقى بالصحة تماماً.\r\nيعرض الجزء الأول من الكتاب بإسهاب المتغيرات وكيفية التعامل معها، والعلاقة المباشرة بين حاجة الفرد من الغذاء، وعمره وجنسه وحالته الفيزيولوجية ونشاطه، وحالات المرآة الحامل والمرضع، والأطفال منذ السنين الأولى من العمر حتى سن المراهقة، وأحوال المسنين والمصابين بالهزال أو السمنة.\r\nيوضح الكتاب تشكيل الماء للقسم الأعظم من تركيب جسم الإنسان، واتحاد المواد الكيميائية الأخرى بنسب متفاوتة مع عناصر الكربون والآزوت والكبريت، لإعطاء السكريات والدسم والبروتينات، وتشكيل الكالسيوم والفوسفور مادة العظام والأسنان الصلبة، مما يحتاج معه هذا الصرح الوافر والمعقد في تداخلات وظائفه إلى بناء متطور وترميم مضطرد، يرفد باستمرار بعناصر تسمى غذاء، وليست هي كذلك بالضرورة، ويجب حسن اختيارها وتقدير حاجة جسم الإنسان منها، لتجد مكانها المناسب فيه، ويوفر منها العالمان النباتي والحيواني حول الإنسان ما يحير غالباً.\r\nيجمع الجزء الثاني من الكتاب أغلب المعطيات التحليلية المتوفرة حول التراكيب الكيمائية لأكثر من مئتي مادة غذائية وفق تصنيف اختصاصي علوم التغذية المعاصرة مع جداول هامة للمواد الغذائية وقيمها.\r\nيصرح الكتاب أننا في عالم كيمياء الغذاء بحق، وعلينا الاطلاع الدائم عليه بحذر.
