كما يعرض لموضوع التلوث الميكروبيولوجي للأغذية والمياه، وفساد الأغذية، والتسمم الميكروبيولوجي لها، ودور البكتريا في إعداد بعض المنتجات الغذائية. والجانب النظري لا يكتمل إلا بشقه العملي، وهو ما كان في الجزء الثاني من هذا الكتاب، تحقيقاً للفائدة المرجوة منه، والغاية العلمية والعملية التي وُضع من أجلها.
