يرمي هذا الكتاب إلى تقديم منقرضة اليوم، لمعالجة الزيتون بغية استخراج زيته بطريقة فريدة، يبدو أنها خاصة بلبنان، وأنها لم تنل لحينه العناية من قبل المعاينين المحليين أو الأجانب. الجهازان المعنيان هما المطروف واليقوف: الأول ضارب -مقشر- خلاط يتحرك بواسطة القوة المائية، لا يتيح ضرب (تقشير وتمزيق) الزيتون بدون سحق النوى فقط، بل الحصول على كمية هامة من الزيت منذ عملية الضرب أيضاً، الثاني هو المستخدم لاعتصار الخلطة الناتجة عن الطرف.
ويستند هذا العمل إلى تحقيق حقلي طويل دام ما مجموعه 24 شهراً. ابتدءً بالعام 1995 وانتهاءً بالعام 2003. شمل العمل زيارة 283 قرية واستطلاع 30 مجرى للمياه بطولها واستجاع معطيات تعود إلى 403 مطاحن مائية ومن بين الأخيرات 230 تزاول عملاً مزدوجاً (قمح وزيتون) و17تواول إلا عملاً واحداً (زيتون). وتضمن البحث أيضاً 29 إجهوزة أثرية، و28 بيدراً لدهس العنب، إضافة إلى 192 مهراساً "تقليدياً (مدرس) و115 إجهوزة "حديثة".
