Book Description
"آداب القهوة" هي أرجوزة لطيفة بعث بها جميل بك المعلوف للمؤلف الشيخ أحمد بن أحمد العناياتي (توفي سنة 1014ه)، كان قد نقلها عن مخطوط نسخ في القرن السابع عشر للميلاد، وجده في المكتبة الوطنية في باريس، فعلق عليها المؤلف شرحاً مختصراً يظهر غوامضها:
فدتك روحي هاك دَرًّ الأدب / في قهوة كالمِسك بل كالذهب ، جاءت على خدِّ المدام شامة / وشاركتها في إسمها علامة (...)".
وفي هذا السياق يقدم المؤلف مطارحات ومراسلات أرجوزة العناياتي، تسرد ما يقوله الشعراء في القهوة وكذا المؤرخون والجغرافيون عن أصنافها وأماكن زرعها واستخداماتها وحتى توزيعها وانتشارها، ومن هذه المراسلات نقرأ قول المؤلف "أرسل إلينا صديقنا الشيخ مصطفى أفندي مدرس العربية في المكتب السلطاني والكلية العثمانية في بيروت ملاحظتين على شرح هذه الأرجوزة ... فنشرهما شاكرين له حسن ظنه" وفيها أن محاورة اليازجي وسركيس ببيتين أصلهما للشيخ عبد الغني النابلسي الشهير، أجاب بهما بتحريم شربها، ولكن الشطر الثاني من البيت الأول يرى هكذا: (ما نهى الناهون عنها) والشطر الأول من البيت الثاني يروى هكذا: (كيف تدعى بحرام) ويقول أيضاً استزادنا رشيد افندي فارس معلم الزحلي من وصف القهوة وتأريخها فوق ما ذكره بـ "عرف شجرة البن اليونان والرومان والحبش، وغرست في البلاد الحارة، وتوجد الآن في بلاد العرب والهند والبرازيل ...". وهكذا يتابع المؤلف حديثه عن آداب القهوة وينتهي بقوله "وتطلق الآن القهوة على نوادي الإجتماع، سواء تناولوا فيها القهوة أم لم يتناولوها ...".
