القهوة عند العرب عنوان للأصالة والكرم في عاداتهم وتقاليدهم وتراثهم المادي والمعنوي العميق المرتبط بالإنسان العربي في ح ّ له وترحاله، وغناه وفقره، وأفراحه وأتراحه، والقهوة بطقوسها الخاصة لها احترامها وتقديرها المتعلق بقواعد الأدب والسلوك في المجتمع الإماراتي، فلا يعد إكرام الضيف ذا شأن إذا لم تقدم له القهوة، حتى ولو نحرت له الذبائح، وقدم له ما لذ وطاب من طعام وشراب. هذه من العادات الواجب التقيد بها، ولا يجوز إغفالها أو تجاهلها، إلى جانب الالتزام بالتقاليد والآداب المرافقة لطقوس تحضير القهوة وتقديمها أوردت هذه الدراسة بداية معرفة العرب بالقهوة التي تعرف عليها صوفية اليمن في موطنها الأصلي إثيوبيا، والذين يعود لهم الفضل في احتضان ثمار البن ونشر شراب القهوة إلى العالم. إضافة إلى تت ّ بع مسيرة القهوة التاريخية المد ّ ونة التي اتفق عليها جميع المؤرخين في مسألة الريادة العربية حين شاع شأنها في اليمن على يد فرسان القهوة الصوفية الثلاثة الذين تنازعوها دون منافس، والذين عاشوا في زمن ومحيط جغرافي واحد، وذكروا حسبما جاء في أقدم توثيق مدون لذلك الحدث في مخطوط ُ عثر عليه في طور سيناء.
