لقد كانت المطاعم قديماً تتخذ شكل أكواخ صغيرة الأماكن التي يتوقع فيها اجتماع كثير من الناس: في الأسواق، وفي الشوارع... الخ. أما اليوم فقد اصبح بيع الطعام تجارة عالمية تتطلب تخطيطاً دقيقاً وإعداداً علمياً سليماً. وتتطلب نوع من التصميم المعماري الخاص بها ولما كان مجال التصميم المعماري من المجالات الكبيرة التي تحتاج جهوداً واسعة تبذل، وكانت المغامرة فيها غير مأمونة العواقب، حيث تؤدي لى أموال كبيرة تهدر، ومساحات كبيرة تضيع، وكان للعشوائية في التصميم خطورة كبيرة، تحتم التنظيم والتقنين في هذا المجال، حتى يقف المصممون في خضم حقله الواسع الفسيح على مدى جدوى عملهم قبله أن يخطوا الخطوة الأولى فيه.
وتأتي دراسة الاعتبارات التصميمية للمطاعم من هذه الخطوات المهمة في طريق هذا التصميم والتقنين. وإدراكاً من المهندس الاستشارى "محمد ماجد خلوصي" لأهمية هذا الموضع من ناحية، والفقر الذي يعاني منه المكتبة العربية الهندسية في هذا المجال من ناحية أخرى، فقد أصور ثمانية جزاء ضمن موسوعته المعمارية عن التصميم المعماري شملت عدداً من المباني السكنية والفندقية والترفيهية والعامة،.
