من الصعب توثيقاً ومنهجاً أن يلمّ باحثٌ بقصّة الطّعام وإعداده بالطّهي (أو الطبخ) في مسيرة الحضارة الإسلامية، فالمساحة شاسعة، وعدد الناس غير متناهٍ، وأذواقهم لا تحصر، وطبائع الأرض غير متناسقة، وعطاؤها غير مأمون او غير منتظم، والخصب والإمحال غريمان متقابلان في مصادمة لا تنتهي، وجُهد الإنسان في تنمية حياته يَخْضَع لقوانين طبيعية وإجتماعية، قد تجعل منه العاملَ الكادح المندفعَ، أو الطاقةَ الخاملةَ الموات.
إنّ هذا المدخل الموجز، لا يضَع صورةً مقرّبة لموضوع الطهي والغذاء والمائدة في العالم الإسلامي، فذاك عملٌ غير هّين، أو يكاد يستحيل على أيّ جهد، وكتب الطّبيخ المنفردة عبر العصور الإسلامية خاصّة، هي سجلات عن ثقافة عصور محدّدة في الزمان وربّما في المكان، لا أكثر.
لقد كتب العربُ كثيراً مما يتعلَّقُ بالطَّعام والشَّراب، وما يتَّصل بهما، لكنّ معظم مصادر الطَّبيخ في التراث العربي، فُقِدَ بما تعرَّضت له الأمّة من وَيْلات، أو ما يزال محفوظاً في الخزائن، ولم يُنشر منه إلاّ القليل؛ كما أنه لم يُدْرَس دراساتٍ مُستفيضةً من كافة الجوانب المتعلِّقة بالمواد، والعناصر، والمركّبات، والأخلاط، والخصائص، والمصطلحات، والأدوات، ومصادر الغذاء، وأوجه التأثر والتبادل فيما بين العرب ويرهم من الأمم.
ولعلّ هذا النصّ التراثي يساهم في كتابة تاريخ حياة الغذاء لدى قطاع من المجتمع الإسلامي في القرن الرابع الهجري.
في هذا الكتاب كثيراً من مُسمّيات الأواني والأدوات، مما يمكن أن تُضمَّ في موسوعةٍ متخصّصة، وقد جعلنا لها فهرساً خاصّاً.
