Book Description
نشر الدكتور داود الجلبي الموصلي رحمه الله هذا الكتاب أول مرة في سنة 1353هـ 1934م في الموصل ولذلك لم تشع نسخه على نطاق واسع، إما لأنه لم يطبع منه نسخ كثيرة أو لسوء نظام التوزيع إذ ذاك، وقد اعتمد في نشره على نسخة فريدة وجدها إتفاقاً في خزانة كتب جامع أيا صوفياً في اسطنبول، ويقول الجلبي: "وقد احتوت النسخة الخطية على 54 ورقة، طول الورقة منها 20 سم وعرضها 14سم، وتحتوي كل صفحة منها على 15 سطراً، وكتبت بخط نسخي على ورق ثخين"، بيد أن الجلبي لم ينشر أيّ أنموذج مصوّرٍ منها.
وقال الجلبي في مقدمته للكتاب: "هذا كتاب فريد في بابه، حوى جميع ألوان الأطعمة التي كانت مستعملة على عهد العباسيين، ألفه رجل عراقي قبل سقوط بغداد بــ33 سنة، ولقد أجاد كل الإجادة في بيان صورة تهيئة كل لون بعبارة متقنة، كأنه يصف كيفية عمل كيماوي، وبه يستدل على مدنية راقية وترف عظيم في ذلك العهد".
جاء في مقدمة داود الجلبي رحمه الله ما نصّه: "في النسخة الأصلية حواش صغيرة على هامش الصفحات كتبها أُناس مجهولون، أغلبها عبارة عن بعض جمل نُقلت من منهاج البيان، نظرت فيها فوجدت معظمها لا فائدة منها فأهملته، وأثبت قليلاً منها بين عضادتين في متن الكتاب تتميماً للفائدة "أما الحواشي التي في أسفل بعض صفحات هذا الكتاب فهي لي، وأظنها لا تخلو من فائدة"، وقد صدق، ولذلك أثبتُّ الكثير منها وصححت بعضها وأضفت إلى التذييلات ما وجدته مفيداً من الشروح والتعليقات للقارئ المتتبع الجاد.
