هذا الكتاب، هو الرابع في سلسلة مؤلفات ابن النفيس التي نوالي إصدارها في طبعات محققة، وهو كتاب مفقود لابن النفيس ينشر لأول مرة عن مخطوطة فريدة، وهو يختلف في موضوعه عما أخرجناه من قبل، ويتميز بقدر من الإفادة. في (المختار) نجد ان ابن النفيس يحصر الأغذية التي تصلح لجميع أحوال الأبدان الإنسانية في الصحة والمرض؛ ليكون ذلك بمثابة دستور للأطباء. فهو يورد من ألوان الغذاء ما يناسب كل حالة؛ حتى يعفي البدن من تناول الأدوية المفرطة والمركبة بقدر الإستطاعة، وكأنه انتبه في هذا الوقت المبكر، إلى أهمية العلاج بالأغذية قبل الأدوية.
ولما كنا قد اعتدنا تقديم كل نص محقق من نصوص ابن النفيس، بدراسة ممهدة له تتناول موضوعاً يتصل بالنص المحقق. فقد قمنا بالتمهيد لنص (المختار) بدراسة حول: نظرية العلاج بالأغذية.. وهي النظرية التي أسهم ابن النفيس في رسم ملامحها بشكل يثير الإعجاب، ويتجاوز المرحلة التي عاش فيها. ولعل قارئ الكتاب يتعرف من خلاله على بعض الإسهامات العلمية العربية، ويقترب قليلاً من طبيعة النظرة العربية للغذاء. في وقت تتعرض له العقلية العربية المعاصرة لسيطرة النظرة الغربية للطبيعة والعالم الإنسان.
