يعاني الدارس للعلوم الطبيعية والتطبيقية من نقص واضح في المكتبة العربية يجعله في حيرة من أمره ويدفعه دفعاً إلى الكتب الأجنبية وخاصة الإنجليزية منها.
والعودة إلى الكتاب الأجنبي ليس يسيراً على الكثيرين من طلبة الجامعات العربية، مما يزيد الأمر تعقيداً ويبقي قضايا بالعلم مستغلقة على أذهان الدارسين - وعلم الكيمياء بكل تشعباته هو أحد هذه العلوم التي نلاحظ نقصاً في الكتب العربية منها، وإسهاماً في سد هذا النقص.
قام كل من الأستاذ الدكتور دولار محمد صابر، والأستاذة الدكتورة ميسون بشير رسام في إخراج كتابهما "تطبيقات في الكيمياء الحياتية" إلى حيّز الوجود - ذلك الكتاب الذي يعدّ بحق إضافة هامة إلى المكتبة العربية وموجه بشكل أساس إلى الطلبة الدارسين في كليات العلوم والصيدلة والطب والزراعة.
ويحتوي كتاب "الكيمياء الحياتية التطبيقية" فصولاً أربعة أولها: يتناول الفيتامينات والتميمات الأنزيمية ويعنى بتصنيفها وتخليقها وخصائصها ودورها الحيوي وإنتشارها وأهميتها في تغذية الإنسان، أما الفصل الثاني: فيختص بالأنزيمات من حيث إكتشافها وخصائصها العامة وتسميتها النظامية وأهميتها في علم الأغذية.
كما يتناول هذا الفصل أهم الأنزيمات في علم الأغذية وفي الصناعة من حيث تفاصيل التفاعلات التي تحفزها بما في ذلك آليات التحفيز وحركيات التفاعل، أما الفصل الثالث فيتناول أنواع الإختمار في الكائنات المجهرية والظروف الملائمة للإنتاج الصناعي لبعض نواتج الإختمار مع توضيح لآليات التفاعلات أينما أمكن ذلك، والفصل الرابع: يخص موضوع الشحوم ومواد الإستحلاب تركيبها وآلية عملها.
