كان الخبز ولا يزال الشغل الشاغل للمصريين، وهمهم الأكبر، وصناعتهم الأولى، فعليه قامت العديد من الصناعات وارتبطت به الكثير من الأنشطة، بداية من زرع الحبوب وحصدها وتذريتها وتخزينها في المخازن والأشوان، ومما ارتبط بكل ذلك من حرف وأنشطة وموظفين وكتبة وأمناء مخازن وغيرهم. ثم مرحلة طحن الحبوب وما ارتبط بها من صناعات ليس فقط صناعة الطحن ذاتها ولكن صناعة الطواحين والأهوان والرحى وغير ذلك، ثم صناعة الخبز وطرق خبزه وأنواع الأفران وأشكال الخبز من دائري ومستطيل ومثلث وغير ذلك.
ولم يقتصر الأمر على الصناعات والحرف التي ارتبطت بالخبز، فقد كان الخبز ثقافة وحضارة، ارتبطت به آداب وعادات وتقاليد، وقيلت في شأنه الأمثال الشعبية، وحيكت حوله القصص والحكايات. بحيث إن كثيراً من جوانب الحضارة المصرية القديمة لا يمكن فهمها إلا في إطار ثقافة الخبز وتراثه. وهذا هو ما يحاول أن يرصده هذا الكتاب من خلال تناول أسماء الخبز ومراحل صناعته وما ارتبط من عادات وتقاليد، بحيث قدم للقارئ صورة بانورامية عن صناعة وثقافة الخبز فى مصر القديمة.
