الغذاء وقود الحياة في الكائن الحي، والغذاء سلاح ذو حدين فهو إما ان يكون مصدر الصحة والقوة، أو المرض والضعف. والإنسان على وجه الخصوص شديد التأثر بنوعية وكمية ما يتناوله من غذاء. حيث أن أغلب ما يحتاج إليه من عناصر غذائية يتم الحصول عليه عن طريق الغذاء، ولا يتسطيع الجسم تخليقه.
ولكل عنصر غذائي تركيز أمثل فى الجسم، إذا نقص أو زاد عنه يعتل الجسم ويضعف. ويحتاج الجسم إلى مجموعة من المواد الغذائية هي الدهم والبروتين والكربوهيدرات والفيتامينات والمعادن، وعلى الرغم من صغر كمية المعادن التي يحتاجها الجسم إلا أنها تشكل دور بالغ الأهمية في ميتابوليزم الغذاء داخل الجسم وما يترتب على ذلك من انعكاسات مختلفة على الصحة.
والمعادن على وجه الخصوص لا يتسطيع الجسم تخليقها، ولابد أن يحصل عليها من مصدر خارجي (الغذاء أو الإمدادات الدوائية) ولأهمية المعادن لصحة الإنسان، عمدت إلى تأليف هذا الكتاب ليكون مرشداً على طريق الصحة، وهدفاً سهل المنال للحصول على التثقيف الغذائي اللازم للتمتع بصحة جيدة في جميع مراحل العمر.
