يجب أن يعتبر الطبخ تجربة ممتعة. كما أنه يجب أن يفتح الأبواب على ثقافات كثيرة وطبخ الشرق الأوسط، كما يقدمه "تسي مالوس" في هذا الكتاب هو موضع اهتمام الجميع وقد كان اختيار المؤلف للبلدان باعتبار أن منطقة الشرق الأوسط تشمل بالإضافة إلى الدول العربية اليونان وقبرص وتركيا وأرمينيا السوفيتية، وربما كان العنوان الأصح هو طبخ الشرقيين الأدنى والأوسط، وباعتبار أن هناك الكثير من النواحي المشتركة فيها كالمواد الأساسية مثلاً من لحم وخضار وحبوب وغيرها من تلك التي تستعمل في صنع الحلويات الشرقية. قدّم المؤلف طريقة صنع مأكولات منوعة المواد ومنوعة المصادر في لبنان، العراق، دول الخليج، اليمن، مصر، تركيا، أرمينيا، إيران، أفغانستان، اليونان، قبرص، فكانت هناك أطباق سلطات، يخاني، محاشي، مقبلات، فتات، معجنات، الأرز، اللحوم، الحلويات. شرح المؤلف طريقة إعداد كل طبق بأسلوب خطوة خطوة مع تزيين الصفحات بصور الأطباق المعدّة. إلى هنا يبدو أن المؤلف قام كغيره بإعداد كتاب حول طريقة صنع المأكولات الشرق أوسطية. إلا أن هناك ما تميز به هذا الكتاب عن غيره في هذا المجال حتى استحق لقب "موسوعة الطبخ الميسرة". لقد امتاز الكتاب بتلك المقدمة التي خطها المؤلف والتي وضع فيها عملية الطبخ في إطار ثقافي اجتماعي صحي؛ إلى جانب ذلك أغنى المؤلف كتابه بفصل قدّم معلومات هامة حول أساسيات مأكولات الشرق الأوسط مع لمحة حول الأوزان، المقاييس المستعملة في كل بلد والأدوات المستعملة عند إعداد الأطباق الموصوفة. واختتم المؤلف كتابه بمسارد تسهل عملية البحث عن طبق معين أو معلومة وردت في هذا الكتاب، وذلك من خلال مسرد حول بعض العبارات الواردة ومسرد آخر حول الوصفات.
