هذا كتاب نادر ولطيف لمؤلفه "محمد على عطية"، وهو رائد في وضع الكتب عن المطبخ والأطعمة، وقد بلغت به الأمانة العلمية أن لا يصف نفسه بأنه مؤلف الكتاب، ولكن استخدم لفظ "جامعه" إذ اعتمد على خبرات الكثيرين من الطهاة في عصره، في نقل وصفات الأطعمة والمأكولات التي كانت معروفة حينئذ، كما دفعته مراعاة الدقة إلى أن يضيف عنوانا فرعيا شارحا ( في الطبعة الأولى ) فيقول "وهو كتاب خاص بتدبير المنزل يحتاج اليه كل بيت ولا يستغني عنه رب عائد". وترجع ندرة الكتاب لمرور قرن كامل على صدوره، فقد صدر في القاهرة قبل مائة عام كاملة، وكان أول كتاب باللغة العربية في مجاله، أما لطف الكتاب فيجيئ لبساطة التناول وسهولة الأسلوب، فضلا عن شمول رؤية الكاتب، فهو لم يقدم كتابا في وصفات الأكل وأنواعه وطرق تجهيزه، بل رسم من خلال الأصناف التي عرفتها مطابخ البيوت القاهرية في مطلع القرن العشرين صورة اجتماعية وتاريخية وحضارية للقاهرة ومجتمعها في هذا الوقت، فقدم الأكلات الشعبية والغربية ( قال عنها الإفرنكية جريا على العادة المتبعة في ذلك الوقت) كما قدم الأصناف التركية والتي لا يعرفها قارئ اليوم إلا من خلال مشاهدتها في الأفلام القديمة مثل الألماظية والضولمة وغيرهما من أنواع المأكولات التي كانت مرتبطة بطبقات معينة في المجتمع المصري.
