وقد انهمك على مدى ثلاثة عقود في شؤون العرب الأمريكيين، وهو مؤسس معهد العرب الأمريكيين (AAI) ومركزه واشنطن.
ويدعم هذا المعهد المشاركة السياسية للعرب الأمريكيين في التيارات السياسية الأمريكية.
كما أسس زغبي حملة حقوق الإنسان الفلسطيني في السبعينات.
وأصبح لاحقا المدير التنفيذي للجنة العربية الأمريكية لمكافحة التمييز العنصري .
وهو فاعل في السياسة الأمريكية، إذ عمل نائبا لمدير الحملة الانتخابية الرئاسية لجيسي جاكسون.
ويشارك في البرامج الحوارية السياسية على الشبكات التلفزيونية الأمريكية الرئيسية، وقد قدم برنامج "وجهة نظر" على قناة أبوظبي.
