"كان مذهاً ما وجدته في الحقيبة من وثائق نادرة عن القهوة، منسوخة من كثير من متاحف ومكتبات العالم بما فيها مكتبة فرنسا الوطنية ومكتبة الكونجرس والمكتبة البريطانية وقصاصات لا نهائية مجهولة المصدر. ومُذ وجدتُ الحقيبة أُصبت بالقهوة، وتعلّمتُ المشي. وهكذا سِرتُ في طرقات بيوت القهوة التاريخية في الحجاز والقاهرة ودمشق وإسطنبول، وفيينا ولندن وباريس وبرلين ، وسان فرانسيسكو وبوسطن ونيويورك وعواصم الفايكنج. صعدتُ جبل القهوة، قارئًا ومُحبًّا، ثم تلميذًا في مدارسها، ونادلً في أيام الاجازات القصيرة، ثم معلّم تحميص، ومساءً بشكل أكبر في مقاهي الكون! وخال تلك الرحلة التي استغرقت سنوات عدّة، حمّصَت دواخلي القهوة (كما يقول بلزاك). درست خال تلك الرحلة كيمياء القهوة والماء، وتزنّرَتْ روحي بالحزام الكوني الذي يُحيط بخاصرة أشجار القهوة في العالم. قرأت تاريخ الحب والحرب، والعقائد والفلسفة، والكشوفات الجغرافية والثورات، والموسيقى والفنون المرتبطة بالقهوة. قرأت كل شيء كي أعرف القهوة، فعرفتُ كل الاشياء، وتيقّنت أنه لا أحد يصل إلى القهوة."
