"الكيمياء الحيوية" Biochemistry هي ذلك الفرع من فروع الكيمياء العضوية Orangic Chemistry والتي تختص بدراسة التغيرات التي تحدث في الخلايا والأنسجة الحية في كل من خلايا وأنسجة المملكة النباتية أو الحيوانية سواء كانت كائنات حية دنيئة أو كائنات حية راقية.
ولذا، فهي تهتم بدراسة التركيب الكيميائي للمواد الكيميائية التي تدخل في تركيب الكائنات الحية أو المواد الكيماوية التي تنتج في خلايا الأنسجة الحية أو التي لها علاقة بها.
تناول المؤلف في هذا الكتاب فكرة عامة عن أساسيات الكيمياء الحيوية Fundamental of Biochemistry من حيث التركيب الكيميائي Chemical Strcture لأهم المركبات العضوية المكونة لأنسجة الكائنات الحية وأهم تفاعلاتها وأيضاً نتناول فكرة عن المتغيرات الحيوية للمواد الغذائية الأساسية أثناء عملية الهضم Digestion والتمثيل Metabolism (Anabolism and Catabolism).
تعتبر الكربوهيدرات Carbohydrates والبروتينات Proteins والليبيدات Lipids والأحماض النووية Nucleic acids من المركبات العضوية المعقدة والتي تدخل في تركيب أنسجة الكائنات الحية، بالإضافة إلى ذلك توجد مركبات عضوية مختلفة بكميات قليلة إلا أنها ذات أهمية حيوية كبيرة مثل الفيتامينات Vitamins والهرمونات Hormones وبعض الأحماض العضوية Organic acids والأملاح والكحولات Alcohol ومعظم هذه المركبات تمثل عناصر غذائية أساسية في غذاء الإنسان والحيوان والتي يمكن أن تتحول مركبات تدخل في تكوين الأنسجة أو تعويض التألف منة أو إنتاج حيوانات منوية وبويضات أنثوية للحفاظ على النوع كما يمكنها أن تتحول إلى طاقة لازمة لنشاط الحيوان وإستمرار حياته.
