في كتابه " سُبحة اللآلئ " يتناول الخوري مخائيل سيرة البرديوط جرجس جبران الخوري ، ويتطرق إلى ذكر كهنة وأحبار أجلاء من عائلة الخوري سبقوه في الحالة الكهنوتية أو تبعوه واتخذوه مثالاً ، منهم المطران طانيوس الخوري رئيس أساقفة أبرشية صيدا المارونية السابق ، والخوري إلياس خادم رعايا مار جرجس في صغبين والسيدة في باب مارع وعيتنيت .
ولد البرديوط جرجس جبران الخوري الوكيل الأسقفي في صغبين والبقاع الغربي في 13 تشرين الثاني سنة 1889 م ، وتوفي سنة 1973 م ويكشف هذا الكتاب عن صفحة مجيدة من تاريخ الكنيسة المارونية التي أعطت الوطن والمهجر رجالات صالحين ، خلّد إسمهم التاريخ .
قدم المؤلف لكتابه بمقدمة ومما جاء فيها : " سبحة اللآلئ " كتاب مؤلف من خمسة فصول يحوي كلٌ منها عشر فقرات . استوحينا الكلمة الأولى من إسم الكتاب وترتيبه من " المسبحة " التي لا تفارق يدي المطران طانيوس ، أما الكلمة الثانية فاستعرناها من الكنية التي تُطلق على بلدة صغبين " لؤلؤة البحيرة " . وترسخ العنوان عندما بدأنا البحث في الكتب والوثائق عن المادة التي مكّنتنا كتابة سيرة البرديوط ، فوجدنا أنه متحدّر من سلالة كهنوتية عريقة أظهرت لنا كتب التاريخ إسم ثلاثة أشخاص منها ، كما تبيّنا أنه سلفٌ لثلاثة كهنة يكملون السلالة الكهنوتية ، فهؤلاء الكهنة السبعة الذين يتوسطهم البرديوط جرجس هم بالحقيقة لآلئ روحانية وعلم وقداسة ( ... ) " .
يتضمن الكتاب ملاحق ، تشكّل محطات حياة البرديوط جرجس الخوري كتبها بخط يده ، ووثائق ، بلغت ثلاث وخمسون وثيقة مكتوبة بخط اليد باللغتين العربية والإنجليزية ، ومخطوطات ، وأوراق المطران طانيوس الخوري ، ومقابلات مسجلة ومحفوظة في أرشيف المؤلف الخاص ...
