يقصد به كتابنا هذا الموروث الشعبي ونخص به الأكلات التراثية الأصلية التي ما زالت معروفة ومرغوبة لدى الكثير من الشعوب.
حمل هذا الكتاب الإسم التركي بما اشتمل على وصفات عديدة ومتنوعة من المطبخ التركي التراثي التي جابت أنحاء تركيا وأقاليمها إضافة إلى تأثير المطبخ التركي القوي والكبير على المطابخ الأخرى، كالمطبخ المصري، المطبخ الفلسطيني، والعربي، مما أوجد وصفات مشتركة بينهما مع اختلاف بسيط في طريقة إعدادها لكل بلد.
لذا بدأنا الكتاب بالطبخ التركي والذي فاقت وصفاته على وصفات الطبخ الأخرى، حيث اشتمل على 47 وصفة، ثم الطبخ المصري ... فالفلسطيني ... ثم العربي ... وأخيراً الهندي.
وقد حرصنا على زيارة هذه البلدان والإلتقاء بالمختصين بالطبخ التراثي للوقوف على وصفاتهم بدقة كما كانت عليه بالماضي وذلك سعياً منا للوصول إلى المذاق الأصيل لهذه الوصفات.
