يهدف هذا البحث إلى كشف النقاب عن حضارة العرب في الأندلس من خلال أهم جانب من جوانب هذه الحضارة وهو المأكل والمشرب والكشف عن استعمالات اللغة عند الأندلسيين لمعرفة إلى أى مدى كان للأندلسيين لغتهم الخاصة بهم ، فلقد حمل الأندلسيون الألفاظ العربية دلالات خاصة لم تكن معروفة عند المشارقة. كما يهدف البحث إلى الاهتمام بجانب من الجوانب مازال بكرا في الدراسات الأندلسية وهو الجانب اللغوي عند الأندلسيين. من خلال أهم كتاب يؤرخ لهم ، وهو كتاب نفح الطيب من غصن الأندلس الرطيب ، وذكر وزيرها لسان الدين بن الخطيب لأحمد بن محمد المقري التلمساني ، المتوفي في 1041هـ. وهذا الكتاب يهدف إلى أن يكون لبنة في بناء صرح شامخ يسعى صاحبه إلى تحقيقه، وهو صنع معجم لغوي تاريخي للحضارة الأندلسية في شتى مناحيها.
