A gluten-free diet - or any other type of diet - was never on my priority list. Since my childhood, I was blessed with a solid digestive system that allowed me to eat the most adventurous foods without consequences; hence, restriction or fear of certain elements was never in my mind. I knew that gluten-free diets were getting more and more popular and many people actually asked me to share gluten-free recipes, but the truth is, I was not compelled to do it as I was not able to connect with this need… until it became a reality in my own team!
Majda, the bubbliest girl in the CookingWithAlia team started getting fatigued and sick frequently, and she could not figure out why. 6 months later, an allergy test showed that she had gluten sensitivity and needed to cut all gluten from her diet. Well, how would that affect me you would ask? The CookingWithAlia core team is more like a family than a workplace and food is not just “work” for us, it is our passion! With one member of our team needing to be careful about food and not being able to fully enjoy our recipe testing feasts or meals, an adjustment was a must. First, our homemade snack selection had to expand: our beloved morning Moroccan Harcha had to get a gluten-free version for Majda. The afternoon sables also became gluten free! Mahmoud, our pastry guru, started creating more and more gluten-free desserts and we actually all enjoyed it (not just Majda)! Creating gluten-free versions of Moroccan recipes became our fun project. Then we decided to assemble our favorite recipes in this book and share it with you!
Whether, you follow a gluten-free diet or not, I hope that you will try these recipes! They are very easy to make and super delicious! Oh, a sweet warm baking smell is tickling my nose… Mahmoud is baking a mega yummy gluten-free cake for Majda’s birthday, I have to go before they eat it all!
