تعرف الإنسان منذ القدم على الحلاوة وعلى الأغذية الحلوة. فقد تعرف على الفاكهة الحلوة والطبيعة زاجرة بأشجار الفاكهة الحلوة التمر، العنب، المشمش، الدراق، الأجاص، …الخ, وكذلك تعرف على العسل كمادة حلوى المذاق وشافية وبتقدم الزمن تعرف على حلاوة القصب والذي كان الهنود يقبلون على مصه للإنتعاش بحلاوته وكان ذلك عام 327م والذي عرف بعد ذلك بقصب السكر وانتشرت زراعته في ربوع العالم وانتعشت صناعة السكر من القصب في القرن السابع عشر والثاني عشر وخلال حروب نابليون وبعد حصار أوروبا حاول بعض العلماء الأوربيون من إيجاد بدائل لمصدر السكر فتمكنوا من اكتشاف السكر في البنجر وبدأت الدراسات عليه وأصبح بعد ذلك مصدراً للإنتاج السكر.
