إنتاج مصر من الزيوت والدهون يتعدى بقليل 200 ألف طن أغلبه زيت دوار الشمس وزيت بذرة القطن وبعض الدهون الحيوانية والتي يتم استهلاكهم محلياً، لذا تعاني مصر من فجوة كبيرة في إنتاج الزيوت والدهون وتلجأ الدولة لسد هذا النقص، لذا يجب على القائمين بشئون تنقية الزيوت والدهون بذل جهد لزراعة أصناف جديدة عالية الجودة والإنتاج لاستخلاص الزيوت والدهون منها والدهون وتكنولوجيا صناعة الدهون كما نتطرق إلى أهم التطبيقات العلمية لصناعة الزيوت والدهون في مصر وصناعة المسلى والمرجرين وخصائصها ونتحدث عن التركيب الكيميائي للزيوت وأهم مشتقاتها، كما نتطرق إلى مصادر الدهون المستعملة التي تؤدي إلى ظهور أنواع مختلفة من الصابون وأهم التراكيب الكيميائية لتلك الصناعة، وعن أنواع الصابون واستخدام الزيوت والدهون العطرية في صناعة أنواع الصابون والصابون السائل، عن عملية التحسين، لذا فأتمنى بعدما يبحث في هذا الموضوع أن أكون قد حاولت الإحاطة والشمول لجميع جوانب تكنولوجيا صناعة الزيوت والدهون والصابون.
